Storing Chocolates

Chocolate should be stored at room temperature (ideally at temperatures between 60-70 °F.) When moving chocolate from the refrigerator to room temperature you may notice a sticky feel and white spots on your chocolate referred to as "blooming". Your chocolate is still edible and is not bad. This is simply caused by condensation which separates the ingredients in chocolate as chocolate and water do not mix. To avoid this, try to maintain your chocolate at a constant temperature. Do not freeze chocolate as this can cause cracking and blooming when returned to room temperature.
If your chocolate begins to melt or softens, simply place it in the refrigerator for 5-10 minutes and it will regain its shape although you may notice some discoloring. This will not affect the taste! Be sure to store your chocolates wrapped or covered at all times because they will absorb odor and flavor from the air.

Transporting Chocolate

When transporting your chocolate or preparing them for outdoor events, it is best to transport them in a cooler or thermal container with ice packs. Be sure to separate the chocolate from the ice packs with a towel to avoid the chocolate getting wet or damp! Place the chocolate near the air conditioner vent and out of direct sunlight.

Our couverture and chocolate coatings are gluten-free and certified kosher. Usual shelf life for milk or white chocolate is 9-12 months and 12-18 months for dark chocolate. Truffles have a refrigerated shelf life of 3 to 6 weeks.
